almond joy bars from Elana’s Pantry. everything I’ve ever tried of hers has turned out great. This is more like chocolate chip cake, than a bar. I absolutely love this one. I use dark chocolate chips, or grind up a dark chocolate bar. The darker, the healthier.  It’s easy to leave out the coconut flakes if you don’t like it. I use big flakes so it’s easy for my kids to pull them off the top if they’re not in the mood for coconut. Go figure.
