Begged-for broccoli is another one of our favorites.
Cauliflower mashed “potatoes” aka “fauxtatoes”: wash and chop and boil a head of cauliflower, just until soft enough to cut through it easily. Drain well. Put in a blender with organic or grassfed butter and garlic and salt. Blend to your liking. You MAY need a dash of milk. Pair this with some grilled mushrooms and a grassfed burger, and you have one of our favorite grainfree sugarfree meals!
You can also do a “fauxtatoes” or “faux grits” mash of turnips instead of cauliflower or with your cauliflower!
